Roasted red cabbage with miso butter

Ingredients
- 1 red cabbage, cut into 8 wedges
- 3 tbsp olive oil
- salt to taste
- 1 tbsp miso
- 3 tbsp softened butter
Directions
- To roast the cabbage, drizzle oil on a baking tray then place the cabbage wedges on top, drizzle more olive oil and season with salt.
- Roast the cabbage in a 220°c over (430°F) for 35-40 minutes, you are looking for a good dark colour.
- To make the miso butter, simply mix the miso with the softened butter.
- Scoop the miso butter on top of your roasted cabbage and enjoy!
