Chimichurri

Ingredients
- 1 large handful of flat-leaf parsley, finely chopped
- 1 large handful of fresh mint, finely chopped
- 1-2 red chillies, finely diced (leave seeds in if you prefer it spicy)
- 2 cloves garlic, finely grated
- 4g (0.14 oz or approx. 3/4 tsp) salt
- 1 tbsp dried oregano
- 3 tbsp red wine vinegar
- 5 tbsp olive oil
Directions
- In a bowl, combine the finely chopped parsley and mint.
- Add the finely diced chillies and grated garlic to the mixture.
- Stir in the salt and dried oregano, mixing well to combine.
- Add the red wine vinegar and olive oil. Mix well until all ingredients are well incorporated.
- Allow the mixture to sit for a little while to let the flavours meld together before using. Adjust the seasoning if necessary before serving.
