  1. Prepare all ingredients in advance and place a wok over high heat.
  2. Heat the oil, then add the sausage. Cook for 2 minutes, then push to one side of the wok.
  3. Add the egg, which will cook quickly. Follow with the garlic chives, cooking them for 3 minutes. Then add the prawns and the white parts of the spring onion.
  4. Cook the prawns for 2 minutes before adding the noodles and bean sprouts. Stir frequently and cook for 3 minutes.
  5. Add the sauce around the edge of the wok and stir well to combine.
  6. Turn off the heat and add the green parts of the spring onion.
