  1. Season the tri-tip generously with salt, pepper, and garlic powder.
  2. Prepare your grill by turning on only one burner to medium heat, at the far end from where you'll cook the meat.
  3. Place the tri-tip on the grill. If you have a bluetooth probe, insert it to monitor the temperature throughout the cook. If not, use an instant-read probe to check the internal temperature every 5-10 minutes after the first 30 minutes.
  4. Cook until the internal temperature of the beef reaches 50°C (122°F), which may take about 1 1/2 hours. Then, remove the meat from the grill and crank up the barbecue to its highest setting.
  5. Once the barbecue is very hot, drizzle a bit of peanut oil on the tri-tip and grill it for 2-3 minutes on each side, or until it develops a good colour all over.
  6. With this technique, a long resting period is not necessary as the meat has been slowly brought up to temperature. Slice the beef against the grain and serve.
