Ingredients
- 800g (28oz) cooked fava beans
- 1 tbsp cumin
- salt to taste
- 1 brown onion, diced
- 1-2 green chillies
- 3 cloves of garlic
- 4 eggs, boiled to your liking
- 2 lemons
- 3 tbsp olive oil
- 2 diced tomatoes
- flatbread to serve
Directions
- Place the cooked fava beans in a pan with approximately 200ml (about 7oz) of water. Add the cumin and a generous pinch of salt. Cook over medium-high heat for 15-20 minutes until tender, then mash the beans.
- Boil your eggs to your liking; I did mine for 7 minutes. Once cooked, peel and set aside.
- In a mortar and pestle, add the green chillies and garlic with a pinch of salt. Pound until you achieve a puree consistency. Transfer three-quarters of the diced onion to a bowl, along with the lemon juice, garlic and chilli paste, and olive oil. Mix well, then incorporate the mashed fava beans. Stir until evenly combined.
- To serve, place the bean mixture in a bowl. Garnish with the diced tomatoes, remaining onions, and boiled eggs. Serve with flatbread on the side.
