Mashed potatoes are a staple in many homes, and there are lots of ways to cook them. Here is my recipe on how to cook great mashed potatoes at home.

  1. Place the peeled and halved potatoes in a large pot with cold water. Season with salt and cook over medium to medium-high heat until fork tender, about 25-30 minutes.
  2. While the potatoes are boiling, infuse the milk. In a separate saucepan, combine the milk, butter, rosemary, and crushed garlic. Warm over low heat for the duration of the potatoes' cooking time.
  3. Once the potatoes are tender, drain them and let them steam in the colander for a couple of minutes to remove excess water.
  4. Return the potatoes to the pot and mash them using a hand masher or potato ricer.
  5. Gradually add the infused milk to the mashed potatoes in two batches, stirring gently to incorporate without overworking.
  6. Serve with a couple of knobs of butter on top and some chopped chives if desired.
