Watermelon and mint salad

  1. Chop watermelon flesh into 2.5cm (1in) cubes.
  2. Halve, pit and peel the avocado. And then quarter the avocado flesh, then slice into five pieces.
  3. Place watermelon on a serving platter, topped with avocado, then rings of shallot.
  4. Zest the lime over the salad then top with torn mint leaves.
  5. Sprinkle with sumac and season with salt and pepper.
  6. Drizzle over oil then the juice of the lime. Serve immediately.
