Fresh Potato Salad

  1. Place potatoes in a saucepan of cold salted water and bring to a boil over high heat.
  2. Boil for 8-10 minutes, until just tender, then drain and set aside to cool to room temperature.
  3. Transfer potatoes to a large bowl with spring onions and dill.
  4. Combine vinegar, mustard, oil, lemon juice and salt and pepper in a screw top jar.
  5. Shake until dressing is emulsified, then drizzle over potatoes. Toss well to combine and serve.
