Chipotle Pineapple Glazed Chicken Skewers

Sweet, smoky, and a little sassy—these Chipotle Pineapple Chicken Skewers bring the heat and the tropical vibes.
Ingredients
- 1.5 lbs chicken breast, cut into chunks
- 2 tbsp Chipotle Olive Oil
- 2 tbsp Pineapple Balsamic
- 2 cloves garlic, minced
- Zest and juice of 1 lime
- 1 tbsp honey
- 1 tsp smoked paprika
- Salt & pepper to taste
- Pineapple chunks (fresh or canned)
- Optional: red onion or bell pepper chunks
- Skewers
Directions
- In a bowl, whisk together Chipotle Olive Oil, Pineapple Balsamic, garlic, lime juice and zest, honey, paprika, salt, and pepper.
- Add chicken to the marinade, toss to coat, and refrigerate for at least 30 minutes (or up to 2 hours).
- Thread chicken, pineapple, and optional veggies onto skewers.
- Grill over medium-high heat for 10–12 minutes, turning occasionally, until chicken is fully cooked and slightly charred.
- Garnish with lime and cilantro. Serve warm.
