Sticky Toffee Pudding

  1. Make the cake
  2. Preheat your oven to 160°C (320°F) fan force.
  3. Start by boiling the water over high heat in a small saucepan. Add the dates to the water, turn the element off and set aside for 10-15 minutes while they soften.
  4. Using an electric handmixer, cream together the softened butter and sugar (note this should almost double in size but probably won't be smooth because of the coarse sugar).
  5. Now, beat in the two eggs, treacle, and vanilla extract until combined.
  6. Turn the mixer off and add the bicarb soda, baking powder and milk, mix until well combined. Don’t worry if the mixture has split at this stage. Add half of the flour and fold through the batter. Next add the remaining flour and fold through until smooth, be careful not to overmix the flour.
  7. Mash your softened dates in the water and fold through the batter, don’t worry if the dates are still chunky.
  8. Grease 6 ramekins with softened butter, lightly dust with flour (tap put the remaining flour), and divide the batter between the ramekins, filling them ⅔ full.
  9. Transfer them to an oven tray and bake at 160°C (320°F) for 20-25 minutes or until a skewer comes out clean.
  10. Make the sauce
  11. To a medium saucepan, add the sugar, treacle, butter and half the cream over medium heat, whisking until you have a smooth consistency - cook this for 4-5 minutes.
  12. Remove from the heat and whisk in the remaining cream.
  13. Serve over the hot sticky toffee pudding with your choice of ice cream or custard.
